She has never received a Michelin star or been included in the 50 Best list, but Buddhist nun Jeong Kwan fascinates the world’s top chefs. Since she was 17 years old, she has lived in Baekyangsa, a Buddhist temple that's open to tourists as well as for spiritual retreats, where guests can try their “temple food”. Culinary journalists and top chefs have visited her to gain insight into her extensive knowledge of the properties of all sorts of fruits, roots, stalks and flowers, as well as ancestral techniques including one of Korean cuisine’s most representative elements: fermentation.
In collaboration with the Korean Cultural Centre, Jeong Kwan will visit Madrid to explain her philosophy and the values of Korean Buddhist gastronomy (or monastic Buddhist cooking) to both residents of Madrid and professionals from Spain's culinary industry.
